agave nectar
Agave nectar comes from the plant from which tequila is made. It's sweet and delicious. It does have an interesting attribute, and that is that it has a lower glycemic index than regular sugar. You can use it as a topping on pancakes, waffles, or to sweeten your coffee.
Traditionally, indigenous groups made agave nectar by extracting the sap from the blue agave, and boiling it until it became a thick syrup. It's a similar process to that of making maple syrup.
Sometimes I like to use agave in a margarita. Try it!
