There are two types of chorizo: Mexican and Spanish. Furthermore, there are two classifications: fresh and cured. I love all of them. As a matter of fact, I have even thought about experimenting with making chorizo at home. It's a winter project.
One of the key spices in chorizo is paprika; it is what gives it the reddish color.
So what is the difference between Mexican chorizo and Spanish chorizo?
Well one of the main differences is that the Spanish variety is dried and cured whereas the Mexican kind is usually raw, and needs to be cooked before you eat it.
For the Mexican variety a little goes a long way because of its strong flavor. Use it to flavor the meat you use in tacos. The Spaniards use their variety in tapas.
