Dijon mustard
Dijon mustard comes from the town of Dijon in the burgundy region of France. It is considered a gourmet mustard and preferred by chefs and experienced cooks alike. It's color is pale yellow and has a creamy texture.
Dijon mustard is considered a prepared mustard because it comes in a jar and as a condiment. This is done to differentiate it from powder mustard and mustard seed.
You can actually make your own version of Dijon mustard at home. All you need are: mustard seeds (yellow), lemon juice or vinegar, and white wine. Now if you can get your hands on a product called verjus, you are in luck!
Essentially verjus is a tart juice that comes from unripe grapes. This liquid was used extensively in cooking during the Middle Ages.
