Ginger can be used fresh or in powdered form. It is an ingredient that features prominently in Asian cuisine. Ginger is a root much like turmeric. It's flavor is somewhat mild. It can be pickled, which is how it is served as an accompaniment to shushi.
It's been used in folk medicine for centuries. It is actually great in alleviating stomach upsets, and helps in digestion. Also used for helping cure a cold. My husband makes a great chicken soup flavored with this tasty tuber.
Another variety of ginger called galangal is very typical of Thai cuisine.
