What is Gruyere cheese, and where does it come from?
Well, it's a semi-soft cheese with a nutty flavor that comes from the town of Gruyeres in Switzerland. Just for the record, it is NOT Swiss cheese! The production of cheese in this area dates back to the 12th century. So prolific was the making of cheese that the product was exported into neighboring France.
Because it melts well, Gruyere cheese is the perfect cheese to use when making fondue. It is also a great table cheese, and one that is perfect for sandwiches.
As far as a substitute... Comte which is its French cousin is a good alternative. Emmental, and Jarlsberg are also good substitutes in the absence of Comte.
