Sushi rice is a short grain rice used widely in Japanese cooking. In order to get it to come together, rice wine vinegar and sugar are added. The short grain is a must, because it will contribute to the soft sticky consistency.
I've only used it to make sushi, and I learned from an expert: a Japanese friend gave my family and I a very good lesson.
You can make sushi rice the traditional way or in a rice cooker. Really, the trick is adding the right amount of rice wine vinegar and sugar so the rice can come together properly.
