What exactly is white balsamic vinegar?
It's made from the unfermented juice of Trebbiano grapes. The liquid is simmered, but not too long in order to keep its light color. By the way, even though it is called white, its color is actually a light yellow.
I like to use white balsamic vinegar when I make salad dressings. It is not as thick, and dark as its counterpart, mainly because it has not been simmered or aged for a long time. Also its price is not as high.
It is a good choice for marinades, and glazes.
