Yikes, Super Bowl Sunday is just around the corner. Are you hosting? Do you know what you are making? Are you invited to a party? Do you know what you are taking. Here are 10 Terrific Super Bowl Appetizers to make your life just a bit easier. These are all a cinch to make. Make one, or make them all. Your guests or host will love you.
First off, I have Spicy Chicken Puff Pastries. Definitely, this is one of my favorite things to eat, and my kids love them too. The best thing, apart from their absolutely awesome flavor? You don't need to make the puff pastry! Yeah, a huge plus in my book. You can make them smaller if you want to get fancy. BTW... don't tell your friends you didn't make the puff pastry. Keep them guessing.
Next on the list, Thai Style Chicken Wings! Who doesn't like chicken wings? There are so many ways to make them. Like all Thai food these babies have a delectable combo of flavors that will make your taste buds go WHOA! Chicken wings are normally fried and then tossed in a sauce. To cut down on the frying, my Thai style chicken wings are baked and then grilled. These are truly finger licking good, and if you know me, you know that I would NEVER lick my fingers, EVER! Thai chicken wings will add an international flair to your party.
Salsa is one of those staples you find at every party. But how about mango tomatillo salsa? The bright green color alone will make it stand out on your table. Tomatillos are super tart, so they pair up nicely with the deliciously sweet mangoes. Tomatillos have been around for a long time, since about 800 B.C. They were initially domesticated by the Aztecs who included them into many of their dishes.
Since I am Latin American, a party isn't a party without empanadas. Mini beef empanadas are perfect for any party. I use a pre-made pie crust, any brand works. I then cut individual rounds with a 2″ biscuit cutter. Each pie crust round will yield approximately 12 mini empanadas. I like these because you can bake them, which is healthier than frying. Now, if you are good with pastries, by all means make your own dough. I use pie crust because it is quick and easy. Again, don't tell your friends you used pre-made dough!
Coming up with 10 Terrific Super Bowl Appetizers was no easy task. Yes, I have a lot of great recipes on this blog and everything, but variety is key when having a party. I like to have something for everyone.
How about a Half Time treat? Would you consider Guinness Cheddar Fondue? It's totally perfect! This is probably something not even your foodie friends are expecting. Guinness has certainly been around the block. According to their website, in 1909 Sir Douglas Mawson, the Australian geologist/explorer, left some Guinness behind at his base camp; it was later found in 1927. Unclear is whether the person who found it actually drank it. Today Guinness is brewed in about 49 countries and sold in almost 150 countries. Trivia: Where in the world is Guinness as popular as it is in Ireland? Nigeria!
Meatballs anybody? Not just any old meatballs, kofta kari. The word kofta means meatball in Hindi and kari is the Tamil word for curry. Back in the 1700’s, the British East India Company while trading with the southeastern coast of India came across this mixture of spices. They anglicized the term, and so it became curry. By the way, in case you were not aware, curry is a mixture of spices and not a spice itself. You can serve kofta kari by itself, or feel free to offer up some naan.
Again, being Latin American, ceviche is always part of the party fare. There are many kinds of ceviche, and one of my favorites is shrimp ceviche. Shrimp ceviche is delicious and a very nice variation on the traditional ceviche which is prepared with a mild white fish. It is amazingly simple to make(if you can chop and stir ingredients you can make this) Your seafood loving friends will be asking for more. So, what are you waiting for? Go make some ceviche, and don’t forget that nice cold beer to wash it down with, or the beverage of your choice.
Another variation of salsa; this one is from Turkey. Ezme is delicious; it's like salsa's Turkish cousin. There's definitely a hint of spicy in it. Try it with your favorite tortilla chips, or eat it by itself, it's that good. The contrast of colors is beautiful too.
And how about another Half Time treat? I have soup on the brain, so here's a great recipe for turkey burger soup, comfort food at its best. This recipe is a variation on a heartier soup: cheeseburger soup, that is popular in the area where I live. Okay, let’s get something clear right off the bat: this is not what I would call “health food”, even though carrots, potatoes, and celery make a solid appearance. Nevertheless, it is so good, and really hits the spot on those cold northern winter days.
And finally, to top off my 10 Terrific Super Bowl appetizer round up, authentic Mexican pork carnitas! Now, you would expect that something that tastes this good has to have a secret ingredient, or lots of ingredients. Actually, authentic Mexican pork carnitas is such a humble dish that you probably have everything you need in your fridge and pantry. I also like to use my very own chili powder blend. Carnitas are so versatile because you can use them for tacos, tostadas, burritos, tamales, and even nachos. Wow!
