First, off let me start by saying that couscous is a pasta, and not a grain. It comes from wheat. They are easy to prepare, since you just steam them until they attain a fluffy consistency.
You can prepare couscous in so many different ways, so needless to say it is very versatile. One of the most popular ways is with vegetables.
It is a staple in North African cooking. There is also an Israeli variety, but the little balls are a bit larger, and also has a chewier texture.
Even though couscous is most likely found in ethnic cuisines, it is little by little making its way in American as well as European restaurants.
