Fontina cheese
Fontina cheese comes from the Val d'Aosta region of Italy where it has been manufactured since the 12th century.
It is a semi soft cheese mad from cow's milk. Fontina cheese is made all year round, but in the summer when the cows are moved to a higher altitude, and fed only grass the cheese takes on a different "grassy" flavor. As it ages its flavor becomes more intense.
In the US Fontina cheese is usually eaten younger than in Italy, thus the US version of this cheese is milder than its Italian counterpart. Italians love to eat this cheese grated over gnocchi.
Because of its mild taste, it's a great cheese to put in a cheese tray along with others that have a more pungent flavor.
