Lemon juice is one of those ingredients I am never without. I always use fresh squeezed because I think the flavor is richer. It is chock full of vitamin C and other nutrients too.
In Latin American cooking lemon juice is key, not to mention in the many desserts that I like to make. It is so versatile.
From a health standpoint, this ingredient totally rocks. Just as little as a 1/4 cup provides you with about 23 grams of vitamin C. It also helps in the digestive process, plus I think it's great when added to water.
Another interesting use... I mix it in with plain yogurt and mango puree to make a fabulous face mask. Try it out.
