Ingredients

  • 1 1/2 cups basmati rice
  • 2 1/2 cups water
  • 1 tsp Kosher salt
  • 1 tsp saffron
  • 3 tsp olive oil
  • 2 shallots minced
  • 1/4 cup almonds slivered
  • 1/4 cup cranberries, dried Ocean Spray® Craisins®

Instructions

  1. Place basmati rice in pot, and add the water, salt, saffron, and 1 tsp. of olive oil. Stir well, and bring to a boil. Turn down heat, cover and cook for 15-20 minutes. Remove from heat, fluff, and cover again until ready to use.
  2. In a non stick skillet heat the remaining olive oil, and saute the shallots and the almonds, until they begin to brown slightly.
  3. Add the shallots and almond to the rice and toss. Finally, mix in the Craisins®.
  4. Sprinkle with parsley.
