If there is one dessert that is truly Latin American I would have the say this is it. Tres leches cake is a super easy to make and oh so tasty! You start with a simple sponge and soak it with evaporated milk, sweetened condensed milk and whole milk. Top it off with some whipped cream and you have a cake dairy delight known in Latin America and Spain as tres leches pastel. These types of cakes with a sweet syrup of fruit liquid poured over are getting popular in American and known as “poke cake”. You poke holes and then pour over your sweet soaking liquid. • 1 1/4 cups flour sifted
  • 5 eggs separated
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 3/4 tsp Kosher salt
  • 1 1/2 cups whipping cream for frosting
  • 1 12 oz can Nestle Carnation Evaporated Milk
  • 1 14 oz can La Lechera sweetened condensed milk
  • 1/4 cup whole milk

  1. Preheat oven to 350'F.

  2. Butter a 9"x11" glass pan, then lightly flour.

  3. Separate the eggs from the yolks and place them in different bowls.

  4. In the bowl of a stand up mixer place the yolks. Slowly add the sugar while beating on high. Continue to mix until the yolks are fluffy. Mix in the vanilla.

  5. Sift the flour into a bowl. Add in the baking powder and salt.

  6. In another bowl beat the whites until they form soft peaks.

  7. Slowly fold the whites int the yolk mixture using a spatula. Next, slowly sift the flour mixture into the yolk mixture and fold ingredients carefully.

  8. Pour the batter into the prepared pan. Place in center rack, and bake for about 35-40* minutes or until cake tester comes out clean. Allow the cake to cool completely before adding the milk mixture.

  9. In a large bowl whisk together evaporated milk, sweetened condensed milk, and milk.

  10. Pour milk mixture all over the cake, and allow it to soak for about an hour before frosting.

  11. Beat whipping cream until thick. Spread over cake using a flat frosting spatula.

  12. *I usually check my tres leches cake after about 35 minutes to make sure it does not overcook.
