- 1 dragon fruit cut into 2 inch cubes
- 2 oz simple syrup lemongrass infused
- 2 oz lime juice fresh squeezed
- 4 oz rum white
- 1 tsp ginger fresh minced or micro-planed (optional)
Slice the dragonfruit in half lengthwise.
Peel the sided of the dragonfruit away from the inner flesh of the fruit.
Cut the fruit into about a dozen pieces and place in a blender.
Add the simple syrup, lime juice, rum and ginger to the blender.
Blend and pulse on low speed until the fruit is just puréed. Don't blend to much or you will pulverize the black seeds of the dragonfruit and the pulp will turn a grey color.
Pour over ice into a cocktail glass and enjoy!
To make the lemongrass infused simple syrup:
1. Heat 1 cup of water and 1 cup of sugar in a saucepan until the sugar is dissolved and starts to thicken slightly.
2. Cut the root end of the lemongrass off and the top of the stalk. You should have about a 4-5 inch piece of the white lemongrass.
3. Place this on a cutting board and beat with a kitchen mallet to break up the stalk.
4. Place the smashed stalks into a container and pour over the simple syrup while warm.

5. You can let the syrup sit overnight and then remove the stalks and strain it.
The simple syrup will store nicely in the refrigerator for several months.
