    Morocco

    I would say that I can count the food of Morocco as one of my all time favorites. The combination of spices is so amazingly delicious. The flavor profile tends to be sweet/spicy, so if you are into that, then you will love this section.

    So why is Moroccan food so flavorful and delightful? Well, it has to do with its culinary influences which come from Andalusia (southern Spain), France, and the Arab world.

    I most certainly included a tagine recipe, which I learned to make from one of the Fullbright students from the university where I work. He came to our house one day and taught my husband and I to cook on a classic tagine. Other favorites from Morocco are mint tea and couscous.

    My next adventure into Moroccan recipes is desserts. So stay tuned, they will be coming soon. In the meantime make any of the dishes in this section, and let me know how you liked them. Enjoy!
