garam masala
Garam masala is a spice blend used widely in Indian food. I have been making my own for quite some time now. For a more intense flavor it is recommended to roast the spices before you grind them.
The name garam masala comes two words: garam (hot) and masala (mixture). In essence curry is a masala because it is a mixture of spices. In Ayurvedic medicine it is believed that the mixture of spices in garam masala elevate body temperature. Having said this individuals who have a cold, or are sick are given a stew prepared with this spice blend.
Like with curry, there is no set way to make garam masala, since various regions, and cooks have their own recipe which they consider to be the best one.
There are even regional differences in the way that this fabulous spice mixture is used. For example in southern India it is blended with coconut milk, while in the north it is used by itself as a seasoning.
