Leeks belong to the Allium family which is where onions come from as well. Only the bottom light green/ whitish part of the plant is edible. The dark green leaves can be used to flavor a vegetable stock.
Leeks are eaten widely in the British Isles. In Ireland for example, leek and potato soup is very popular. They are also popular in the cuisine of Turkey.
Archaeological evidence indicates that leeks were grown in ancient Mesopotamia. They were eaten by the Egyptians and the Jews alike. In Wales, they are part of the national emblem, along with the daffodil.
