    Avocado Cannellini Bean Hummus

    Another great  snack! Avocado cannellini bean hummus? You mean like guac? Not quite! Basically what I am doing here is mixing avocados with cannellini beans. The result is a smooth, creamy, super healthy, super delicious snack that literally melts in your mouth.

    Healthy Hummus

    So, just how healthy is this avocado hummus? Avocados are chock full of healthy fats, as well as vitamin C and vitamin E. Cannellini beans are an excellent source of fiber. They can be substituted with navy beans or Great northern beans. Cannellini beans have a nutty flavor; I actually know someone who makes hummus with cannellini beans, and it is pretty good.

    Avocado cannellini bean hummus makes a great dip, or topping for your morning toast. Also, for a totally radical use take a piece of naan bread, spread with avocado hummus and top with roasted tomatoes and fresh herbs. The possibilities are endless. This is certainly a dip I will be taking to my next summer party.

    Moroccan Flavor

    By the way, for this recipe I am using my very own Moroccan spice blend, ras el hanout. The name ras el hanout means top of the shop, The blend has a variation of spices from 50 to 100. Everyone buys their blend from their favorite spice shop. You can make your own ras el hanout with my link above or order some ras el hanout on Amazon.

    Another dip you might want to try is Hummus, Most people just buy it, but it is so easy to make. It is also healthy and delicious. For a different take you can use cannellini beans to make hummus. The taste will be slightly different, but also delicious.

    A Latin American party would not be a party without the ever popular avocado. Avocados are healthy and delicious. This dip is a different take on guacamole, not chunky, but creamy. Tostones with avocado cream sauce is perfect.

    1. Gather all your ingredients and have them measured, chopped and ready to go.
    2. In the bowl of a food processor place the avocados, cannellini beans, lemon juice, tahini, salt, garlic, olive oil, Moroccan spice, nutmeg, and cilantro.
    3. Run the food processor on high until smooth then scrape the sides of the bowl with a spatula.
    4. Add a little water to get the desired consistency. I like mine with the thickness of yogurt.

    How long can I store the avocado cannellini bean hummus.

    This will store nicely for 4-5 days in refrigerator. The lemon juice helps the avocado from turning brown.

    Can I freeze the avocado cannellini bean hummus?

    I would not freeze this because when thawed the consistency will be off and be a bit runny.

    Avocado Cannellini Bean Hummus Recipe

    A delicious blend of avocados and cannellini beans. A great summer appetizer, or even a spread for your toast.

    Ingredients

    • 2 avocados diced
    • 15.5 oz. cannellini beans 1 can drained and rinsed
    • 1 lemon juiced
    • 2 Tbsp tahini
    • 1 clove garlic minced
    • ½ tsp. Kosher salt.
    • 1 Tbsp olive oil
    • ½ tsp ras el hanout Moroccan spice
    • 1 pinch nutmeg
    • ¼ cup cilantro chopped
    • ¼ tsp chili powder for garnish
    • 2 Tbsp pumpkin seeds for ganish

    Instructions

    • In the bowl of a food processor place avocados, cannelllini beans, lemon juice, tahini, salt, garlic, olive oil, Moroccan spice, nutmeg, and cilantro. Process on high for about 3 minutes, or until smooth. 
    • Scrape the sides of the food processor bowl with a spatula and blend. Add a little water to get the desired consistency. I like mine with the consistency of yogurt.
    • Transfer to a medium size bowl. 
    • Sprinkle with chili powder, add a drizzle of olive oil and pumpkin seeds.
