    gandules

    Arroz con gandules is a typical Puerto Rican dish. I like to make mine with bacon, although it is not truly traditional. However, I am of the belief that everything is better with bacon. Gandules or pigeon peas are a legume.  They are a small greenish bean that is highly nutritious that are thought to have originated in India thousands of years ago. Eventually through trade and commerce they were brought to Africa.

    Gandules have a bit of a nutty flavor. The plant grows well in hot weather, and sandy soil. It is no surprise then that they are a staple in the cuisine of the Caribbean.

    For me one of the best way to enjoy arroz con gandules is with Puerto Rican pernil which is a close cousin to Mexican pork carnitas.
