    Sparkling Mango Prosecco Cocktail

    Ah summer, please don't go, you are my favorite season. Summer is time for leisurely gatherings on the deck or patio. It's time to share with friends and kick back. For me, part of the summer experience is coming up with new and fun cocktails to share with friends and family. Today my sparkling mango Prosecco cocktail is what's on tap to unwind after a hard week or day at work.

    What is Prosecco? Riondo Prosecco is bubbly like Champagne, but without the price tag. It is actually very affordable, that is why I've made it my go-to summer drink. Like it's more expensive cousin it's a sparkling wine from a specific region, namely the Veneto in Northeastern Italy. The grape used to make this bubbly beverage is the glera variety. It's a neutral grape, that grows well in a temperate climate. This variety of grape is thought to be of Slovenian origin, and was at some point in time taken to Italy.

    I'm a Prosecco newbie

    I actually just tried Prosecco very recently. I took one week of much needed R and R at Chautauqua Institution in Western, NY. My friend came to visit for a couple of days, and brought some amazing appetizers, AND Prosecco. So one night we sat on the porch of the old Victorian guest house where I was staying and enjoyed a Mediterranean spread while we sipped on ice cold Prosecco. Great company, and a great beverage.

    You can enjoy Prosecco in so many different ways.

    Think fruit juices, spirits, or garnishes. But, if you happen to be a purist, by all means, don't mix it with anything. However, I thought that creating a prosecco cocktail would be a fun and exciting way to enjoy this bubbly beverage. My sparkling mango cocktail with Prosecco is a funky fusion of old and new world. The sweetness of the mango is a perfect contrast to the fizz of the Prosecco. The element of surprise is a thin slice of jalapeno, which also happens to add a punch of color contrast and a little spicy note. It's not as strange as it sounds, trust me!

    Sparkling Mango Prosecco cocktail is the perfect drink to make for a summer party. Sweet mango juice, and bubbly Riondo Prosecco is a perfect combination and a little jalapeno for a spicy note. A summer brunch must.

    Ingredients

    • 9.6 oz mango juice
    • 2 cups crushed ice
    • 750 ml Prosecco
    • 4 slices jalapeno cored and seeded

    Instructions

    • Place mango juice and crushed ice in a blender. Blend for about 2 minutes, then place in the freezer for about 30-45 minutes.
    • Add 3 oz. of the mango slush to your wine glass, then add about 5 oz. of Riondo Prosecco.
    • Top with a slice of jalapeno.
