    How to make avocado toast that will upgrade your brunch.

    This quick and easy Avocado, mango and queso fresco toast recipe came about all of a sudden. I was trying to experiment with some ingredients I had on hand. You know those nights when you don't want to go to the grocery store and become Dr.Frankenstein in the kitchen? Really, I was going for color, texture, and flavor contrasts.

    I could eat toast with avocados every day.

    Avocado is fresh, creamy and always delicious. Did you know the word for avocados in Vietnamese translates literally to "butter fruit?" What a fitting name. I am glad avocados are always available. There are so many flavor combinations you can create.

    Are avocados a fruit? 

    Avocados are an ancient fruit. They are thought to have originated in Puebla, Mexico about 10,000 years ago. By the way, mangos are an ancient fruit as well, they've been cultivated for about 4,000 years and are thought to have originated in India.

    How can you eat avocados?

    Put chunks of it on top of a salad. It adds layers of flavors to the crunchy elements. Want a creamy dressing that's dairy-free? Whiz some avocados in your food processor with oil and your favorite seasonings for a salad. You can even bake with them! Yes, my daughter who lives overseas told me about some brownies she made with avocados and black beans. She said they tasted like fudge. Another favorite of hers in Viet Nam is the avocado smoothie. Well, we'll see about that one.

    Ingredients

    • 1 Avocado From Mexico mashed
    • 2 teaspoons lime juice
    • ¼ teaspoon Kosher salt
    • ½ mango sliced
    • 4 Tablespoons queso fresco crumbled
    • ¼ teaspoon chili powder
    • 4 Slices Bimbo® Bread toasted

    Instructions

    • In a small bowl mash the avocado, then stir in the lime juice, and the Kosher salt. Spread on the toasted bread.
    • Slice mango thinly, and put on top of the avocado mixture.
    • Sprinkle with crumbled queso fresco and chili powder.
