Mexican food is another favorite of the American public. I am not surprised! It's regional. There are so many dishes to choose from. Like other Latin American foods, it's dynamic, fun, and so versatile. There is something for everyone. The ingredients are readily available. This makes recreating Mexican recipes at home easy. The key ingredients are oregano, coriander, cinnamon and chilies.
Mexico has six key regions. Their food varies according to climate and ingredients. For example in the north beef and goat are popular. In central Mexico, carnitas are very popular. One thing I want to point out is that food in Mexico is not usually served topped with cheese like you see here in the US.
Southeast Mexico has a lot of fish dishes, and Caribbean influences.
Another popular Mexican dish is flautas. These can be filled with meat or chicken, and sometimes cheese.
