Lattes flavors have blossomed beyond French Vanilla, hazenut, and mocha. Where flavors of yesteryear added a richness and warmth, lavender acts quite differently. A lavender latte is aromatic and lightly sweet.
Infused Simple Syrup
Simple syrup could be considered a specialty drink staple. Made with sugar and water, it packs a punch of sweetness without endless stirring or sugary crystals at the bottom. We’re going to focus on lavender syrup here, but don’t feel restricted to that. Simple syrups come in many flavors!
Does Lavender Have Health Benefits?

Lavender is more than an aromatic bouquet accent or herb garden feature. It’s native to North Africa and the Mediterranean. This mighty flower is actually packed with good for you nutrients. Research suggests it may be useful for treating anxiety, insomnia, depression, and restlessness. In addition to the zen-inspiring scent, lavender tea is also said to help with digestive issues and minor aches and pains. Curiously enough, many bedtime teas and bath bombs contain lavender flower or the scent. Lavender has and interesting history that dates back 2500 years. I think these researchers are onto something. It is also used in the popular French blend of herbs known as herbes de Provence.
How to Make Lavender Infused Syrup Step by Step:
Another disclaimer: Less is more. This flower packs an aromatic punch. Start with the 2 Tbsp of dried lavender flowers for the infused syrup. You can only need 2 teaspoons for 2 servings of the lavender latte. Try a teaspoon of the infused syrup to your tea also.
- You will need 1 cup of sugar, ¾ cup water and 2 Tbsp of food grade dried lavender flowers. Add the lavender flowers to a sauce pan with the water.
- Bring the water to a boil then lower to a simmer for 5 minutes. Stir the flowers occasionally while simmering. After 5 minutes turn off the heat and allow to cool for 10 minutes. The water should be just warm to the touch. Add the sugar while warm.
- Stir to combine the sugar until it is fully dissolved. You can turn on the flame on low briefly to add a little heat to help dissolve. You don't want to simmer at this point or the sugar may crystalize later.
- Pour the syrup through a strainer to separate the flowers. Store the syrup in a sealed container in the refrigerator for up to two weeks.

Lavender Latte (It's Vegan!)
Ingredients
- 8 oz coffee strong
- ¼ cup almond milk substitute soy milk also
- 2 tsp simple syrup lavender infused
Instructions
- Heat the milk in the microwave or on the stove until warm. Do not boil or scald.
- Pour the milk into a frothing pitcher and using a milk frother whip until it doubles in volume.
- Pour the milk into the coffee cups holding back the foam with a spoon.
- Spoon the milk foam on top of the coffee. Garnish with a few flowers or cinnamon.
