The flavor of fresh raw tomatillos adds a burst of tangy flavor to this guacamole style salsa. Enjoy with tacos, tortilla chips, tostadas or fajitas! Tomatillo avocado salsa is my go-to for a quick fresh snack that feeds a bunch of people!
This salsa is popular for its refreshing taste and versatility, making it a favorite in Mexican cuisine and beyond.
This was inspired by my blender salsa verde with mango on this site, and pairs well with these spicy pork tacos.

Ingredients
This salsa uses simple ingredients that most local markets should carry.
- Tomatillos - You will need 12-14 fresh tomatillos or about 1.5 pounds. Soak them in warm water and then remove the papery husks and stems.
- Medium white onion - This type of onion will add a bold pungent flavor to your salsa and is a bit stronger than yellow or sweet onions. You need that punch of flavor.
- Garlic - You have to have a couple garlic cloves, no need to explain why. Enjoy!
- Serrano peppers - This will bring a nice level of heat to the salsa. They range from 10,000 to 23,000 Scoville Heat Units. Their heat level is more intense than jalapeños but less than habaneros.
- Cilantro - This adds a herbaceous fresh flavor.
- Ripe Avocados - Try to find a really soft fresh avocado and it will add a nice creamy flavor and texture.
- Lime juice - Use the juice from 2-3 limes and more to taste. Do not use lime juice concentrate. Fresh lime juice is the best!
- Salt, sugar, olive oil - Add these to taste then serve with tortilla chips.

Instructions
Here are the step by step photos to make a your salsa.
- Step 1: Place the tomatillos into a bowl of warm water in batches to remove the husks. Soak for a few minutes and the husk will be much easier to remove.
- Step 2: Slice the tomatillos into quarters and place into the bowl of food processor.
- Step 3: Pulse the raw tomatillos until you have a coarse puree.
- Step 4: Pour the tomatillos into a large serving bowl, add the remaining ingredients and stir to combine. Store in an airtight container after serving.
Hint: The tomatillos can have a slightly sticky surface below the husk. Soaking them in warm water before removing the husk removes the sticky residue.
Substitutions and Variations
Here are some ways to change up your tomatillo avocado salsa with extra heat, flavors and sweetness.
- Fruit - Add some diced mango, pineapple, peaches or nectarine for a sweet twist to your salsa.
- Spicy - Swap out the serrano chiles with habanero or Thai chiles to kick up the heat a notch from mild to hot salsa! Feel free to add a bit of honey to balance out the heat with some sweetness. A less spicy version can use jalapeños.
- Herbs and Vegetables - Adding in some fresh chopped mint or Thai basil brings another depth of flavor. Some diced cucumber is also a nice addition.

- Food processor - You will need a model that has a least a 4 cup capacity or you may need to pulse the tomatillos in batches.
- Knives, cutting board - I like to use a chef's knife for most kitchen tasks.
- Serving bowl and serving spoons
- Airtight containers work nicely for storing the leftovers for up a 3 days.
