Latin American
The flavors of Latin American food are the flavors I crave often, the flavors I grew up with. I am so excited that over the last few years these foods and flavors have become popular in American culture.
Most Latin American recipes are different from Mexican foods in their flavor profile. For example Latin American foods tend to have rich flavors instead of spicy. You will still encounter spices like paprika, and the use of jalapeno peppers, but the flavors don't overpower. Cumin is another favorite spice.
The herb of choice in this cuisine is cilantro. Now if you are not a love, of this herb, just change things up a bit. If I were to pick a favorite, I would have to say that the arroz con pollo, pork carnitas, or pernil are my favorites.
